Betty’s Version of Boone Tavern Spoonbread Recipe
In this video, Betty demonstrates how to make the spoonbread that Boone Tavern Restaurant (in Berea, KY) is famous for. The recipe comes from the cookbook Look No Further, written by Richard T. Hougen, manager of the Boone Tavern Restaurant from 1935 1975.
Ingredients:
3 cups milk
1 ¼ cups cornmeal
3 eggs
2 tablespoons butter
1 ¾ teaspoons baking powder
1 teaspoon salt
Stir meal into rapidly boiling milk. Cook until very thick, stirring constantly. Remove from fire and allow to cool. The mixture will be cold and very stiff. Add well beaten eggs, salt, baking powder and melted butter. Beat with electric beater for 15 minutes. Pour into well greased casserole. Bake for 30 minutes at 375 degrees. Serve from casserole by spoonfuls. This is the spoon bread for which Boone Tavern is so famous. Be sure to use white cornmeal for the true southern bread.

Spoon bread is “heavenly!” That dish should feed about 8 people–so, just have 1/8 of it at a time (unless you skip something else!) The watermelon rind pickles are syrupy sweet. They are delicious; I can’t compare them to anything–nothing else tastes quite like them! Thanks for your lovely comment!

I never had …
I never had spoonbread before. My grandmother was from South Carolina and she never mentioned it. I love hot corn bread with milk poured over it like cereal. Is this the same taste as cornbread with milk?

I live in the South (Florida) and have surprisingly never heard of Spoonbread before. I am most definently going to have to try it. It looks delicious! Thanks again Betty for another wonderfull and yummy looking recipe =] Oh and P.S. I love how you tell us about the history of different places and dishes, like this one and when you went to the original Kentucky Fried Chicken. It’s fascinating to learn about the history of some the foods we eat.

Hi! If you video is too long, YouTube won’t accept it–10 minutes is supposed to be the maximum length, but I have gotten by with almost 11 minutes. Also, if your internet connection is very slow, your computer may time out before your video uploads. You would need to save your file on disk and go to another computer. I hope this helps!
